Pumpkin Cupcakes

As I was looking at my old recipes I noticed I never had the chance of sharing with you my pumpkin cupcake’s recipe. I was surprised as I love these cupcakes so much I can’t even tell.

These sweet bites are super easy to make and your house will smell divide. And yes, your guests will just love them. No doubts !

Method:

 

Preheat your oven to 176°C, line a muffin pan with cup cake liners and set aside (you can oil the surface of the cupcake pan so the batter wont stick to it)

In a large bowl cream together the sugar, vegetable oil, vanilla, eggs and pumpkin puree

Add the dry ingredients and mix just until everything is incorporated

Using a spatula mix the batter from the bottom to make sure nothing is left stuck to the side of the bowl

Using a large ice cream scoop or two spoons, scoop the batter evenly in your prepared pan

Bake for 20-22 minutes or until when you insert a toothpick in the center it comes out clean

Let the cupcakes cool completely

Frost them if you want
