Pumpkin Pie is a traditional sweet dessert, often eaten during the fall and early winter, especially for Thanksgiving and Christmas in the United States and Canada. The pumpkin is a symbol of harvest time and featured also at Halloween.
This recipe is fuller, creamier and this way heavier. But in the end, who can turn down such delicious dessert like pumpkin pie ?!
Method:
Preheat oven to 220°C
Whisk together pure pumpkin puree, egg and egg yolks in a large bowl until smooth
Add sweetened condensed milk and pumpkin pie spices and whisk until thoroughly combined
Fit the brisee foil (shortcrust pastry) in a 9-inch or 22 cm pie plate or pan
Pour filling into the pie shell and lightly tap on the work surface to release any air bubbles
Bake in the preheated oven for 15 minutes
Reduce heat to 175°C and bake until just set in the middle, for 30-40 minutes or until the inserted knife into the filling comes out clean
Allow cooling completely before serving
