Everybody should (must I mean) bake some Pumpkin Cookies during this month. These are soft, chewy and absolutely delicious cookies. The smell and the combination between pumpkin puree and pumpkin pie spices are just divine. Super easy to make so don’t think it twice !
Method:
Preheat your oven to 180°C and line a couple cookie sheets with parchment paper and set aside
In a bowl, mix together the flour, baking powder, salt and pumpkin pie spice, set aside
In another bowl cream together both kinds of sugar and butter
Add the egg, pumpkin puree and vanilla and make sure they are well blended
Add the dry ingredients and mix until they are all incorporated
Use a small ice cream scoop to form your cookie and make sure to put them apart from each-other because they will spread as they bake
Bake in the preheated oven for about 12–16 minutes or until golden brown around the edges
Allow them to cool completely
