Breakfast is the most important meal of the day, so you should never skip it. Few weeks ago we launched the basic pancakes recipe, which resulted a total success.
This time I decided to play a bit with it’s flavour and make it more healthy by adding oatmeal. If you’re busy and don’t have that much time in disposition during breakfast, I suggest you to prepare the batter the night before and cook it tomorrow. This way you will have freshly cooked pancakes for you and your family.
Method:
In a large bowl whisk together milk, eggs and oil
Set aside
In a food processor combine : flour, sugar, baking powder, salt, cinnamon, and 85 gram oats
Pulse a few times to coarsely grind oats
Add dry ingredients and the remaining oats to the bowl
Whisk just until moistened (make sure to not overmix)
Set aside for one hour
Heat a large frying pan or griddle on medium heat
Grease the pan with an oiled napkin every time you cook pancakes
Use a spoon or ice cream scoop to dollop the batter on the pan
Let the pancakes to cook until bubbles appear and the edges dull
Flip them with a spatula and let them cook on the other side aswell
They should be evenly browned on both sides
To keep the pancakes soft put them in a towel and flip it over (the towel)
