No Ice Cream Machine Strawberry Cheesecake Ice Cream

Ice cream is our best friend when it comes to such hot days. But most of us step back when it comes to making homemade ice cream. The main reason is for not having an ice cream machine at home.

With this recipe you won’t need any fancy equipment besides few bowls and your hands!

This frozen treat is perfect for any time and you will make everybody fall in love with it. The best combination : cheesecake and ice cream. I mean what can you ask for more?!

  • You can use other berries aswell instead of using strawberries (mango can work really good too)

Method:

 

Whip cream until you reach the consistency of stiff peaks (which I did before) and set aside

Crush the biscuits in desired size and set aside (I love crushing them in small pieces so I can have biscuits in every bite I eat)

If using fresh strawberries fold them into the strawberry jam and combine well, set aside.

In a clean large bowl, combine the softened cream cheese, condensed milk and lemon juice together and beat well until smooth and creamy

Gently fold the whipped cream into the cream cheese mixture

Use a big container/or few small ones to put everything together

How to : sprinkle at the bottom of a container half of crushed biscuits. Pour half of the ice cream base over the crackers. Dollop half of the strawberry mixture over the first layer of ice cream base. Sprinkle the remaining crushed biscuits. Pour the remaining half of the ice cream base over the top. Dollop the remaining strawberry mixture over the top.

Using a butter knife or spatula, gently swirl the contents of the container to mix the strawberries and crackers around to distribute them nicely

Seal and freeze for at least 8 hours, preferably overnight
