These cupcakes are super simple to make and really delicious. You should always have on hand a basic recipe of cupcake and this is the chocolate version.
I’ve been using this recipe for the past few years and it’s a killer, believe me ! I never get bored or have enough of these sweet bites.
These cupcakes are the ideal breakfast or snack. You can have them always on hand; prepare the batter and storage on fridge in constant temperature for few days up to a week. This way you will always have freshly baked cupcakes and who doesn’t fall for that ?!

Method:
Preheat your oven to 176°C, line a muffin pan with cup cake liners and set aside (you can oil the surface of the cupcake pan so the batter wont stick to it)
In a small bowl, combine the flour, dark cocoa powder, baking powder, salt and set aside
In a large bowl cream together the butter and both sugars until creamy and fluffy
Add the egg and mix in together
Add half of the dry ingredients and mix
Add half of the buttermilk and mix again
Repeat this once more until all ingredients are finished
Using a spatula mix the batter from the bottom to make sure nothing is left stuck to the side of the bowl
Using a large ice cream scoop or two spoons, scoop the batter evenly in your prepared pan
Bake for 20 minutes or until when you insert a toothpick in the center it comes out clean
Let the cupcakes cool completely
