Oatmeal cookies are favorite breakfast or snack for both : kids and adults. These chewy cookies are filled with oats, coconut or any dried fruits you want. Easy to make and delicious to taste, you will find the solution to fast breakfast or surprise visits from friends. You can store the dough in freezer and bake it whenever you need it, this way u will always have in hands freshly baked cookies.
- Instead of coconut you can use any kind of dried fruits such as raisins etc. If so use 150 grams of any kind of dried fruits you’re using.
Method :
Preheat your oven to 180°C and line 2 baking sheets with parchment paper and set aside
Mix together the oats and coconut flakes and set aside
In a bowl cream together the butter and sugar. Scrape the sides of the bowl time after time with a spatula making sure the batter is mixed equally
Add in the eggs one at a time while beating
Add in the baking powder, cinnamon, salt and vanilla extract. Continue beating
Add flour and mix in, beat until flour is corporate, do not over-beat (this will make you cookie dough tough and make it more of a bread consistency)
Add in the oats and coconut flakes and mix well with a spatula or spoon
Using a small ice-cream scoop or 2 spoons divide the batter on the cookie sheet, make sure to put them apart from each-other because they will spread as they bake
Bake for 12 minutes or until cookies have this golden brown look (make sure not turning them into brown)
Let the cookies cool on the baking sheet for 5 minutes and then place them somewhere else, letting them to cool completely
