Easy Banana Oatmeal Muffins


If you think that the only solution for overripe bananas is to through them away, you have to consider that twice. Not only overripe bananas are very good for your health, but they are the perfect natural sweetener too.

These oatmeal and banana muffins are ideal for breakfast and quick meals during the day.

  • You don’t have to worry if you don’t own a food processor, that’s fine. Mash the bananas with a fork. Then keep working the batter with it or switch to hand whisk.
  • I suggest you to spray the muffin tin with a non stick spray or butter, instead of using the cupcake/muffin papers. The batter with stick to the paper and it would be hard to take that off without destroying the structure of the muffin.

Preheat oven to 176°C

Add in food processor bananas, sugar, eggs, oil, milk, salt, baking powder and baking soda

Blend all these ingredients together

Pour this mixture in a large bowl and add the oatmeal

Set aside for 3-4 minutes, this way oatmeal will absorb the liquids

Add the flour and stir, do not overmix

Spray the muffin tin with non-stick spray

Scoop the batter into the prepared muffin pan, filling each cup until almost full (but not completely)

Bake for around 20 minutes or until when you insert a toothpick in the center it comes out clean
