Carrot Oatmeal Cookies


These carrot oatmeal cookies are perfect for a delicious and fast breakfast and why not as a snack between meals too. The best part is that these cookies will take you only few minutes to prepare and than bake.

  • If you want, you can add dry fruits and/or nuts.



Preheat oven to 160°C.

Line a baking sheet with parchment paper and set aside.

In a bowl add brown sugar, eggs, melted butter and mix with a whisk or electric mix.

Add the flour, baking powder and the cinnamon and keep mixing.

If using a hand whisk, transfer to a spatula.

Add instant oats, minced carrots and mix until well combined.

Using a small ice-cream scoop or 2 spoons divide the batter on the cookie sheet, make sure to put them apart from each-other because they will spread as they bake.

Bake for around 15 minutes or until golden brown look (make sure not turning them into brown).

Let the cookies cool completely before storing in an airtight container.
